Whether drafting this knife for a collection, or volunteering it into active duty, the winner of this outstanding piece will have acquired a remarkable find, indeed. It was forged in the USA in the 1970's by Ekco, best known in this country even today as makers of the very fine Ek fighting knives first introduced to Special Forces in WWII. As you can see it has NEVER been used and is offered here in superb condition.

It has its military contract id # on its blade and well as Quartermaster's markings and the date of its manufacture, 1951. It was made during the early part of the Korean War-era and it shines like stainless now but its carbon steel blade will discolor normally, with use. For the serious butcher or chef, it is an essential. Known alternately as a straight steak knife, bullnose butcher knife or just an American butcher knife, this outstanding carbon steel knife can carve up the largest carcass, yet is still beautifully balanced in the hand to permit the speedy dispatch of any kitchen's most demanding and delicate slicing tasks.

It's still kind of hard to imagine so fine a knife being used to produce such terrible food as the Army was serving in those days, though, isn't it? Like all fine knives, this chef's knife has a fully hand-forged blade over a full-tang triple-riveted in brass onto beechwood handle scales. There is no disputing its quality--it's simply world class, on par with the best French or German knives--or in the pleasure that a trained hand will experience in its usage.

It measures 15" long with a 10" blade. An outstanding, heirloom-quality piece for user and collector alike.
